Spring Fennel & Citrus Salad
With spring in the air this salad comes together in a matter of minuets and is the perfect side. Perfectly paired with baked fish, bbq lamb or roast chook.
Ingredients:
- 1-2 bulbs of fennel shaved or finely sliced (put into cold water until ready to serve)
- 1 cup of green herbs, mint, parsley, fennel fronds
- 1-2 grapefruit(s) segmented / blood orange, cara cara orange works well too
- Dressing of 2 tbs olive oil, 1/2 shallot finely diced, 1/2 lemon juice, 1 tsp mustard and salt/ pepper to taste
Method:
Mix dressing in a small bowl, taste and add seasoning to your taste
Throw together in bowl and mix, serve immediately and enjoy!
